    07Feb2010 Salami Lardellato
    A special treat from our Otto House-Cured Meats Department. Traditional Salami of La Marche is made with finely minced lean pork from the shoulder or leg. Seasoned with only peppercorns it is traditionally studded with diced bacon. At Otto we make a version of this studded with hand cut pieces of our housed cured Lardo made from the fat back of the red waddle pig.
